I have been blessed with an over-abundance of apples from friends. After one marathon day of making apple sauce with 5-5gallon buckets filled with apples, I decided there had to be a better way.
I soon found this post on one of my favorite blogs. After having a Eureka! moment, I've been peeling and slicing apples.
I fill the crockpot full, sprinkle lots of cinnamon and a little nutmeg,
then let it cook on High until it's mushy and lumpy.
When it's done, I fill canning jars with applesauce and start another batch.
I store the jars of applesauce in the fridge with thier lids on, and when I have enough to run a canning batch, I fill up the canner with cold water, put the jars in the cold water, heat the water to boiling and then process them. I add a little extra time just to be safe, as I'm not really a knows-what-I'm-doing-canner. But, so far, I've had excellent results.
Easy, smeasy, peasy. Just the way I like it.
